The dried root of an herbaceous perennial plant indigenous to the Middle East and Central Asia but now cultivated extensively in Eastern Europe and South Asia. The roots are harvested, cleaned, beaten into straight lengths, cut to size as sticks and dried.

Liquorice Root has a sweet characteristic flavour and is much used in the confectionary trade (Pontefract cakes etc.) A stick of the root may chewed to slowly release its flavour. It may also be ground in a coffee grinder for use as a flavouring agent.
